Method:
- First of all, put semolina in a bowl. Add one cup curd and one third water and mix.
- After this, add salt and whisk well. The mixture has to be whisked so much that there are no lumps left in the solution.
- After this, cover the solution and keep it aside for 20 minutes, so that it sets well.
- After the stipulated time, take the batter and add baking soda to it and mix it well.
- Then take a plate and grease its bottom with oil. Pour the prepared batter up to half an inch height of the plate.
- Now take a vessel to make dhokla and add 1-2 glasses of water in it. After this, keep a stand in the vessel and place the plate containing the batter on it.
- Now cover the vessel and cook the dhokla on high flame with the help of steam. The dhokla will be ready in 10-15 minutes.
- After 10 minutes, try inserting a knife in the dhokla. If the knife does not stick, then cook the dhokla in steam for another 5 minutes.
- After this, turn off the gas and remove the dhokla plate from the vessel. After the dhokla cools down, cut it into square pieces.
- After this, start the process of preparing the tadka. Heat oil in a small pan and add mustard seeds and cumin seeds and crackle them.
- When the mustard seeds start crackling, add sesame seeds, green chillies and curry leaves and fry for a few seconds and then turn off the gas.
