Ingredients to make Arbi
Arbi – 1/2 kg
Onion finely chopped – 2-3
Tomato puree – 1/2 cup
Curd – 1/2 cup
Gram flour – 2-3 tbsp
Chopped green chili – 2-3
Coriander powder – 2 tsp
Red chili powder – 1 tsp
Garam masala – 1/4 tsp
Ginger-garlic paste – 1 tbsp
Turmeric – 1/2 tsp
Bay leaf – 1-2
Steep red chili – 2
Cinnamon – 1 small piece
Cumin – 1 tsp
Kasoori Methi – 1 tsp
Oil – 4 tbsp
salt – as per taste
Coriander leaves chopped – as required
how to make
To make colocasia curry, first wash colocasia thoroughly. Now take a cooker, put Arabica in it and put it on medium flame. Boil it till 2 whistles. After boiling well, their peels will come out. You can cut arbi into pieces of your choice. Now take a pan, put some oil in it and heat it on medium flame. When the oil becomes hot, add pieces of Arabica to it and fry for about 1 minute. After this add all the spices including turmeric, red chili, kasoori methi. Now put one spoon gram flour in this vegetable and mix it by adding Arabica with the help of a ladle.
After this, take another pan, add 2 tbsp oil and heat it. When the oil becomes hot, add bay leaf, cinnamon and cumin and fry it. After frying for some time, add finely chopped onion pieces and ginger-garlic paste and fry till the onion becomes soft. After this, add whole red chilies and green chilies to this mixture. After about 2 minutes, add tomato puree to the vegetable and cook. Then add curd, a little water, kasuri fenugreek, coriander powder and cover the vegetable and keep it for cooking.
When the gravy starts boiling, add fried Arabica and mix it with the mixture with a ladle. Keep in mind that the vegetable has to be covered and cooked on low flame only. After about 5 minutes, turn off the gas and take it off. Now this delicious vegetable can be served with roti, paranthas or rice.
