It is very difficult to decide what vegetable to make every day in summers because in this season there are only a few options of vegetables and more than half of them are not eaten by children. Colocasia is one of these vegetables. Not only children, even adults do not like this vegetable, so today we will know its recipe which everyone will like.
Okra, brinjal, ridge gourd, bottle gourd, tinda, arbi and pumpkin are the vegetable options available in summer. Some of these options are rejected by children, while some are rejected by adults. In such a situation, it becomes a headache to decide the vegetable for lunch to dinner. It is difficult to understand what to make every day, which can be eaten by children and adults without any drama.
There are some vegetables which are very healthy, but due to their taste people do not like to eat them. This includes not only tinda or bottle gourd, but also arbi. However, arbi can be made tasty with a little experimentation. Today we will learn about one such recipe, which will surely be liked by children as well as adults. Your plate of food will be cleaned in minutes. Ingredients – 1 gm arbi, tsp Kashmiri red chilli powder, tsp red chilli powder, tsp turmeric powder, tsp coriander powder, tsp cumin powder, tsp dried mango powder, tbsp gram flour, tbsp rice flour, tbsp chopped coriander, tbsp mustard oil, salt as per taste First of all, boil arbi with a little salt till two to three whistles.
After it cools down a bit, peel it and cut it into round pieces.
Mix Kashmiri red chilli, normal red chilli powder, turmeric powder, dried mango powder, coriander powder, cumin powder, gram flour, rice flour in a bowl.
Pour this spice over the boiled, chopped arbi and mix it with hands or spoon.
Heat mustard oil in a pan. Add cumin seeds and asafoetida to it.
Then add arbi and fry it on medium flame for 3 to 4 minutes.
Add chopped coriander leaves on top and serve hot with roti, paratha or rice-dal. 1. Arbi boils easily in two to three whistles. Over boiling does not make the vegetable good.
- After peeling and cutting arbi, keep it in the fridge for some time. If it has been over boiled, then keeping it in the fridge will improve its texture a bit.
