Kodo rich in nutrients and fiber are very beneficial for health. In such a situation, if you want to start your day with a healthy breakfast, then you can try Kodo’s upma for this.
Serves: 2
Material :
1 cup kodo
2 cups water
2 tbsp oil
1 tsp mustard seeds
10-12 curry leaves
a chopped onion
1 finely chopped green chilli
1/2 inch piece grated ginger
1/2 tsp turmeric powder
salt to taste
1/4 cup finely chopped fresh coriander
1/4 cup roasted peanuts
1/2 cup mixed vegetables (such as carrots, peas, beans, bell peppers, cabbage, broccoli, etc.)
Method :
First of all, wash the kodo and soak it in water for 30 minutes.
Later drain the water and keep the soaked kodo aside.
Now heat oil in a pan on medium heat and then add mustard seeds and cook it.
After this add curry leaves, onions, green chillies and ginger and cook it well.
Now add vegetables to it and fry for a few minutes and then add soaked kodo.
After this add 2 cups of water, turmeric powder and salt as per taste.
Now cover the pan with a lid and cook for 15-20 minutes or till the kodo becomes soft.
Finally add roasted peanuts and garnish it with green coriander and serve hot.
