Ingredients required to make Amritsari Chole
Bakbuli Chana – 1 cup
Finely chopped onion – 2
Finely chopped tomatoes – 2
Minced Garlic – 7-8 cloves
Chopped Ginger – 1 inch piece
Cinnamon – 1 inch piece
Bay leaf – 1-2
Black cardamom – 2-3
Green chilies cut lengthwise – 2-3
Carnation – 2-3
Tea bags – 1-2
Kasoori Methi – 1/2 tsp
Red chili powder – 3/4 tsp
Dry mango – 1/2 tsp
Coriander powder – 1 tsp
Turmeric – 1/4 tsp
Cumin – 1 tsp
Dry red chili – 1
Oil – 2 tbsp
salt to taste
To make Punjabi dish Amritsari Chole, first take Kabuli Chana. Now soak them in water for at least 6 hours. After this, take these chickpeas out of the water and put them in the pressure cooker. Now pour two and a half cups of water in the pan, add large cardamom, cloves, bay leaves, sweet soda, tea bag and salt as per taste, close the lid of the pan and keep it on medium flame. Remember it has to be boiled till 4 whistles. After this, turn off the gas and take them out.
After this, take a pan and put 2 tablespoons of oil in it and keep it on medium flame on the gas. When the oil becomes hot, put cumin seeds in it, cumin seeds will start to crackle. After this add chopped ginger and garlic. Stir this mixture for a few seconds with the help of a ladle, then add finely chopped onions and fry for about 2 minutes. When the onion becomes soft and light brown, add other spices and salt.
Now take kasoori fenugreek and mash it with hand and add it to this spice and fry it for about a minute. Then add finely chopped tomatoes and let the sauce cook. Cover the pan and cook for 2-3 minutes. Now remove the chickpeas from the gas and put them in the pan and cook after mixing it well with a ladle. Now put chopped green chilies in it. After this add dry mango powder and cook for 2 minutes and turn off the gas. You can serve this delicious Amritsari Chole with paratha, roti or rice in lunch or dinner.
