Mushroom – 2 cups
Cashew paste – half cup
Cumin – 1 tbsp
Asafoetida – 1 pinch
Curry leaves- 5-6
Turmeric powder – 1 tbsp
Garam masala powder – 1 tsp
Red chilli powder – 1 tsp
Coriander Powder – 1 tbsp
Tomato paste – 2 cups
Finely chopped onion – 1
Ginger garlic paste – 1 tbsp
Finely chopped green chillies – 4
Oil – 2 tbsp
Salt – as per taste
To make delicious cashew mushroom masala, first prepare all the ingredients. After this, take a pan or kadhai, add oil in it and heat it. When the oil is hot, add asafoetida and cumin seeds. Then add curry leaves and green chillies to it. Now add onion, ginger-garlic paste and fry well. After this, tomato puree will also be added to it. – After some time add turmeric powder, red chilli powder and garam masala. When the masala is roasted, add mushrooms to it and leave it for 6-7 minutes.
Now when the mushrooms are cooked well, add cashew paste and some cashews to it. After this, cook it again for 10-12 minutes. After this, turn off the gas and garnish with green coriander leaves. If you want, you can also add Kasuri Methi to it as per taste. After this, you can also add butter on top before serving it. Now you can serve it with roti, paratha or naan.
