Method
Peel the potatoes and cut them thinly, French fry style. Wash it thoroughly in cold water. Now keep the potatoes in cold water for 5 minutes. Throw away this water and wash the potatoes again. By doing this the starch will be removed. Now take mustard oil in the pan. When the oil becomes hot, add mustard or mustard seeds to it. After this add cumin seeds and then broken red chillies. Now add chopped potatoes. Stir the potatoes and cover for 2 minutes. Keep in mind that salt should not be added first otherwise the potatoes will get mushy. Now open the lid and add turmeric on top. Mix it well. Cover again for 5 minutes. Now open the lid and stir the potatoes. Now add salt to it. Let it cook for some time. Check whether the potato is soft or not. If it has melted, turn off the gas and add fresh chopped coriander to it. Do not cover the pan immediately otherwise it will melt due to steam.
