Green chilli – 1 (finely chopped)
Ginger – 1 tsp paste
Salt – half teaspoon
Oil – 2 tsp
Spinach – 1 cup finely chopped

Method

  • First of all, mix the sifted semolina and whipped curd in a deep bottom vessel and mix it well with the help of a spoon.
  • After this add some water so that the solution remains thick. Then add some salt to the batter to maintain the taste of idli.
Now keep this solution covered for 20 minutes, so that it swells a little to make idli.
  • Now put oil in a pan and keep it on flame so that it gets hot. Add mustard seeds and temper it.
After this, add curry leaves, urad dal and fry while stirring well until it turns brown. Add green chillies and all the spices and fry.
For stuffing, peel and mash the potatoes. Now heat oil in a pan and temper it with mustard seeds.
Then add chopped ginger and green chillies and add spinach and cook while stirring until it becomes soft, add a little salt and mix.
  • Put 3 cups of water in the cooker to heat. Add eno to the mixture made for idli, stir a little and keep it for 5 minutes.
  • This will make the idli puffy and spongy. Now apply some oil in the mold for making idli.
  • Add half the idli mixture with a spoon, then add the stuffing and then add a little idli batter.
  • This process will continue further also. After this, keep the idli mold in the cooker.
  • Remember that the whistle in the cooker lid has to be removed. Cook the idli on full flame for about 10 to 15 minutes. Stuffed idli is ready.
