Material :
1 cup urad dal
1 tbsp refined oil
2 pieces green chilli
1 teaspoon ginger
1 pinch asafoetida
4 teaspoon red chili powder
4 spoon chaat masala
4 spoons green chutney
4 spoons tamarind chutney
4 cups hung curd
4 teaspoons ground black pepper
Method :
Wash urad dal and soak it in water for 2 hours. Filter the water and keep it for grinding.
Then put it in the blender. Add salt, green chilli, asafoetida and ginger. Add a little remaining water to it and grind it until smooth.
The batter should be of a dropping consistency and not too thick or watery.
Heat oil in a frying pan.
As soon as the oil is hot, wet your hands with water and carefully drop one spoonful of batter into the hot oil.
Deep fry them until they become golden brown from all sides. Strain onto kitchen tissue.
Take hot water in a saucepan. Soak the vadas one by one in water. Let it rest for 2 minutes.
Gently squeeze out the water from the vadas.
Your soft and spongy vadas are ready to soak up curd with masala.
Mix curd and water together to get a smooth consistency. Add red chilli powder and salt as per taste.
Soak the spongy vadas in curd and leave for 5 to 10 minutes.
Transfer it to a serving bowl and garnish with red chili powder, black pepper powder, chaat masala, green chutney and tamarind chutney.
