Recipe to make Homemade Gulkand Gujiya for Holi

Gulkand is prepared by mixing rose petals and sugar and it is also very beneficial for health. You must have eaten Gujiya a lot but I am sure you have rarely tasted the taste of Gulkand Gujiya. Let us also know how to make it today.

Method to make Gulkand Gujiya
First of all prepare the dough by kneading it. For this, put flour in a bowl and add melted ghee in it and knead it well. When you rub the flour with your hands, it will start looking like breadcrumbs.
Now add water little by little and knead a nice and smooth dough. Keep in mind that your dough should not be too tight or too soft. Cover the dough and keep it aside for 20 minutes, so that it sets.
After this you prepare the filling. Put mawa in a pan and cook it while stirring. When the mawa starts appearing a little dry and light in color, then understand that your mawa has also been roasted. Leave it to cool.
Now add Gulkand (benefits of Gulkand), fennel, grated coconut and mawa in a mixing bowl and mix it properly.
After 20 minutes, knead the dough again for 1 minute and prepare a thin batter by adding some flour and water in a small bowl.
Prepare small balls of dough and roll them in the shape of puri. Place these puris in the gujiya mold and fill the gulkand filling with the help of 1 spoon. Apply thin batter on the edges and close the mould. Remove excess dough from the edges.
Prepare Gujiya in the same manner and keep it in a plate. Keep in mind that your filling should not be too much or less. If there is too much filling, the Gujiya will burst and if there is less filling, it will remain empty from inside.
Now heat oil in a pan and slowly add these Gujiyas and cook them till they become golden brown from both the sides and then take them out in a tissue (History of Gujiyas).
When the Gujiyas cool down, you can store them in a container. Your Gulkand Gujiya is ready. Serve this to your guests and delight them.
