Make sure to make Rasmalai on Holi, recipe

Lifestyle: Ras Malai is a Bengali sweet. Which is made from milk. The consistency of the candies is soft and melts in your mouth. Recently, the famous food guide Taste Atlas published a list of “The World’s 10 Best Cheese Desserts”. Pol Chernik took first place, followed by Indian Ras Malay.

To make Rasmalai you need…
3 liters whole milk
8 tbsp lemon juice
2 teaspoons corn flour
8 cups water
2 cups sugar
10-12 green cardamom powder
a pinch of saffron
6-8 tbsp sugar
chopped pistachios

How to make Rasmalai
To do this, boil milk in a thick-bottomed saucepan. When the milk starts boiling, turn off the flame and reduce the temperature of the milk a little by adding half a glass of water. Then wait for 5-10 minutes and start adding lemon juice until the milk curdles. Add lemon juice to milk until the mixture becomes completely thick. Then remove the water with the help of a strainer and collect the chenna. Wash this chenna with tap water so that no trace of lemon juice remains. Now leave it in the strainer for 10-15 minutes and then take the chenna in your hand and squeeze it gently to remove the remaining water.

Now add corn flour in a big bowl and mix chenna. Start kneading until you get a homogeneous mixture. Use your palm to do this. Once smooth, make balls and add 1 cup of sugar in 4 cups of water in a wide saucepan, heat and let it boil completely. – Put the balls in boiling sugar syrup and cook for 15-17 minutes. Over time their size will double. Now take out the syrup balls and put them in fresh water.

Now to prepare the juice, pour 500 ml milk in a thick bottomed pan and boil it. And soak some threads of saffron in one spoon of hot milk and keep aside. When the milk comes to a boil, reduce the flame and keep stirring the milk from time to time. After 10 minutes add sugar and mix. After 20-25 minutes, when the milk thickens, add soaked saffron and chopped cardamom to it. Also add chopped pistachios. Mix well and turn off the flame.

Take out the cooled rasmalai from a bowl of fresh water. Press lightly with your hands, flatten and place in sugar syrup for about 10-15 minutes before adding to milk. Now place the balls in condensed milk and keep in the refrigerator overnight or for 5-6 hours. Before serving, garnish it with chopped pistachios and a few sprigs of saffron.
