The most important thing is to prepare the batter properly. Most people make the batter too thin or too thick. So that the drum is not made properly. Its solution should not be too thick or thin. Make it so thin that when you put a drop in water with your finger, it starts floating upwards. This is the correct way to check the batter.
After the batter is ready, keep it covered for 10-15 minutes. This helps to set the mixture. Meanwhile, pour oil in the vessel in which you are going to make Dhokla.
Do not use baking soda to ferment the batter. You can use Eno for this. After the batter sets, add eno powder to it and mix. While adding Eno to the batter, remember to mix well but do not take too long.
You can use Dhokla stand for steaming. Or use cooker and pan. Before making this, add some water to it and knead the dough on the stand of the vessel. Cover and simmer for 15 minutes. Check with a toothpick.
