How to make potato-capsicum curry
If there is only potato and capsicum in the house today, then you can make a mix vegetable of these two and that too very easily. Let us tell you how to make potato and capsicum curry.
Ingredients for making potato and capsicum curry-
Potato – 5-6
Capsicum – 2
Tomato – 2
Cumin – 1/2 tsp
Coriander powder – 1 tsp
Red chili powder – 1/2 tsp
Turmeric – 1/2 tsp
Asafoetida – 1 pinch
Green coriander leaves – 3 tbsp
Ginger – 1 inch piece
Oil – 3 tbsp
salt – as per taste
Method of making potato-capsicum vegetable- To make potato-capsicum vegetable, first wash and clean the potato and capsicum thoroughly. After wiping the potatoes with a dry cotton cloth, cut the potatoes lengthwise. If you want, you can also cut potatoes after peeling them. After this cut capsicum into pieces. Now finely chop the green chillies and coriander leaves. Now put oil in a pan and keep it to heat on medium flame. When the oil becomes hot, put cumin seeds in it and let it crackle. When the cumin starts crackling, add finely chopped ginger, asafoetida, green chillies, turmeric and coriander powder and fry for a few seconds. After this, add chopped potatoes to the spices and mix them well with the spices and let them cook. Cover the pan and let the vegetable cook for 5-7 minutes.
When the potatoes become soft, add chopped capsicum to it and mix. If needed, sprinkle some water in the vegetable and once again cover the pan and let the vegetable cook. Keep stirring the vegetable in between with the help of a ladle. After cooking for some time, add red chili powder and salt as per taste to the vegetable and add finely chopped green coriander and mix it. After this, add finely chopped tomatoes to the vegetable and cook for some more time so that the tomatoes can also become soft. After this turn off the gas. Your flavourful potato-capsicum curry is ready. Serve it with roti, paratha or rice.
