Step 1: Prepare the Ingredients
First, take 500 grams of gram flour. Add 2 tablespoons of ghee and mix them thoroughly with your hands. Rub the mixture between your palms—if it begins to bind slightly, it means the ghee is in the right quantity. Now, add water little by little and knead into a stiff dough. Make sure the dough isn’t too loose.
Step Two: Form and Bake
Now break the dough into small balls from the kneaded gram flour. Shape each ball into a fist-sized ball, creating slight cracks. Heat a sufficient amount of pure ghee in a pan and fry these balls over medium heat until they crack and turn golden. Fry all the balls in this manner and let them cool. Once cooled, break them into pieces.
Step Three: Prepare the Coarse Mixture
Now, knead the fried balls with your hands to form a churma-like consistency. If desired, grind them lightly in a mixer, but be careful not to make the mixture too fine, but rather coarse. Strain it through a coarse sieve. Heat some ghee in a pan and fry the coarse mixture until it turns golden brown. When it starts to smell fragrant, add 250 grams of mawa and stir thoroughly, stirring until the two ingredients are combined.
Step Four: Mixing Sugar Syrup and Spices
Now prepare a one-string syrup by mixing 500 grams of sugar and 200 grams of water. If desired, you can add a little orange food coloring to enhance the barfi’s color. Pour the prepared syrup into the roasted gram flour-khoya mixture and stir well. Then, add nutmeg, mace, and green cardamom powder to enhance the flavor. Grease a tray with ghee and spread the mixture evenly on it.
Step Five: Setting and Decoration
Let the mixture cool and set for a while. Apply silver foil on top and garnish with finely chopped pistachios and cashews. Once the barfi is completely set, cut it into desired shapes.
