Ingredients for making watermelon curry
Mustard oil – 5 tsp
Asafoetida – 1/2 tsp
Red chili – 3 whole whole
Saunf – 2 tsp
Cumin – 1½ tsp
Kalonji – half a teaspoon
Ginger – 2 tsp chopped
Garlic – 2 tsp
Chopped Onion – 1 cup
Green chili chopped – 1
salt – as per taste
Turmeric – half a teaspoon
Red chili powder – 1½ tsp
Coriander powder – 1 tsp
Watermelon rind – 3 cups
Watermelon juice – ¾ cup
Dry mango – 1 tsp
Coriander leaves – 1 handful
How to make Watermelon Peel Vegetable

First of all, put oil in a pan. heat it up. Now put asafoetida in the pan. Add red chili to it. Add mustard seeds to it.

Now add fennel, cumin, fennel seeds, ginger and garlic. Now fry it till it turns light brown.

After this add onion to it. Fry till it turns light brown. Add some green chilies. Toss it right.

Now put spices in it. Add some salt to it. Add turmeric, chilli and coriander. Mix all these things well.

Now put watermelon peels in it. Mix all the ingredients well. Add salt as per taste and mix.

Now add watermelon juice to it. Now cook it well. It will take some time to cook. So cook it on low flame.
Step – 7
After cooking, add dry mango powder to it. You can also add chaat masala to it. Add 1 tsp whole kasoori methi to it. In this way, the vegetable of watermelon rind will be ready.
